- Begin by combining the garlic powder, onion powder, paprika, salt, black pepper, cayenne pepper, thyme, oregano, basil, and lemon zest in a bowl. Mix well and set aside.
- In a separate bowl, mix the flour and cornmeal together.
- Heat the vegetable oil in a large pot over medium-high heat.
- Rinse the crawfish and shrimp in cold water and pat them dry with a paper towel.
- Dip the crawfish and shrimp into the buttermilk, then coat them in the flour and cornmeal mixture.
- Once the oil is hot, carefully add the shrimp and crawfish to the pot. Cook for 3-4 minutes or until golden brown.
- Use a slotted spoon to remove the shrimp and crawfish from the pot and place them on a paper towel to drain.
- In a small bowl, mix the chopped parsley and lemon juice. Set aside.
