Ingredients:
To make Provencal beef stew, you’ll need:
2 pounds (approx. 900g) beef stew meat, cut into bite-sized pieces
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 carrots, peeled and sliced
2 celery stalks, sliced
1 cup diced tomatoes (fresh or canned)
1 cup red wine (optional)
4 cups beef broth
1 tablespoon tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Salt and pepper, to taste
Chopped fresh parsley, for garnish (optional)
